Spring Break Getaway- Pine Rose Cabins

It's Spring break starting tomorrow and I am so thrilled to be wisking away to this sweet little place for some family time! We are packing up the brood, pups and all and off to adventure and down time in gorgeous Lake Arrowhead.  Pine Rose Cabins are not only so sweet they are tucked right back onto a little stream.

Now that it's been lighter later and our weather has been gorgeous, all we want to do is be outside.  We decided to take our family night outside this week.  Here's what's on the agenda... family fun

On the grill: Daddy is going to grill up some of our faves- chicken, corn and zucchini.

Activity: While the yumminess is cooking, the girls will be working on their scavenger hunt. Some of our favorite things to find are rollie pollies, lemons on our lemon tree, cloud shapes, flowers, and bark from the trees.

The sweet: Last but not least dessert!!!  Strawberries are fresh and in season right now so we are gobbling them up in all forms!  For family night we are going to do good old Strawberry Shortcake.  The girls love to assemble them themselves and of course load them with whipped cream!

Coffee Cake

I have a couple girlfriends that just had their sweet little baby bundles arrive and I have been gathering my favorite comfort foods to deliver to their doors and snuggle those sweet little babes! I love bringing something sweet that can go as breakfast and as a treat that the hubbies will gobble up.  Enter the easiest and yummiest Coffee Cake!
COFFEE CAKE
1 yellow cake mix
1 pkg. instant butterscotch pudding
4 eggs
3/4 cup oil
3/4 cup water
1 tsp. vanilla
Beat 5 minutes and place in greased 9x13 pan.Mix together 1/2 cup sugar,2 tsp. cinnamon and 1/2 cup chopped pecans. Swirl this mixture thru batter and bake at 350 for 40 to 45 minutes.

So California threw a curve ball into Spring and may have welcome Summer sooner than I'm ready for!  I mean let a girl put on some self tanner and shave her legs before you start in with the 80 degree swimsuit weather!!  Well's it's upon us here and I am gathering up my must have suits for the heat!

My sweet baby P is turning three in a couple months and I've started mulling about her next party plans.  Thinking about my sweet girl makes me revisit her when she was still baking in my tummy and we couldn't imagine life with another baby.  Now almost three years later, I can't remember a life without her. I had very clear ideas of what I wanted for my second little lady's baby shower and enlisted the help of my great friend and wedding planner Blair Britt.  Sometimes you need a second hand on things to add just the right touches and Blair did just that.  My main requirements were, no presents and I didn't want any games. We were circling the idea of baby girl number two and knowing that I wanted a perfume bar we  landed on Chanel No. 2.  The fun sign still adorns P's wall in her room.  I wanted the non- baby, shower baby shower.  I basically envisioned a sweet luncheon for my most dear friends.  I adored the idea of a custom perfume bar and reached out to the best Kamilyin for the extra special touch of this fun favor!  We nibbled, laughed and created our own custom scents in the most perfect celebration of my lovely baby P! I was so honored to have my extra special shower feature on Hostess with the Mostess shortly after which was icing on the cake!

Grasshopper Pie

Firstly, I'm sorry and you are welcome!!!  My mom used to make this heavenly treat when I was younger and it is still one of my all time faves and sooooo easy!  In honor of St. Patty's day, I thought I would share the yummiest frozen desert with you! You can of course get really fancy with this but I like to get to the eating party and whip mine up the simple way! grasshopper pie

Grasshopper Pie

You will need:

1 Orea cookie pie crust ( in baking section of grocery store)

3 1/2 cups of chocolate chip mint ice-cream, softened

Whipped cream or 1 1/2 cup cool whip

To make:  spread softened ice-cream into pie crust.  Freeze for 3 hours. Remove pie from freezer 15 minutes before serving and top with whipped cream.  Voila!

Edamame Hummus

I got turned onto Edamame hummus from my dear friend Tiffany and it's been a problem ever since!  I dream of this stuff!!!  Because I knew I'd be going through this stuff to regularly I thought it was time to make my own! I wasn't alone is my obsession I found and turned to Oh She Glows for her take on this yummy snack! edamame hummus

Edamame Hummus 

recipe from Oh She Glows

 

Yield: 2 heaping cups

Ingredients:

  • 1 (500g) bag frozen organic shelled edamame (equal to 3 cups thawed/drained)
  • 2 garlic cloves, peeled
  • 3-4 tbsp fresh lemon juice (I used 4T)
  • 1/4 cup tahini (stir well before measuring)
  • 2-4 tbsp water, to thin as needed (I used 3T)
  • 1/2-1 tsp fine grain sea salt, or to taste (I used 3/4 tsp)
  • 1/4 tsp ground coriander seeds, optional
  • 1/8th tsp cayenne pepper, optional
  • To garnish: smoked paprika, freshly ground black pepper, extra virgin olive oil, edamame

 

1. If starting with thawed edamame, rinse and drain before using. If starting with frozen edamame, simmer in a pot of water until edamame is heated through. Rinse and drain before using. You can also remove the skins of the edamame for a slightly smoother spread, but I didn’t bother. Set aside a handful of edamame beans for garnish just before serving.

2. With motor running on food processor, drop in 2 garlic cloves to mince.

3. Next, add edamame to processor and process until somewhat smooth, stopping to scrape down the side of the bowl as necessary.

4. Add in the lemon juice, tahini, and water and process again until smooth. Don’t be afraid to let the processor run for a few minutes and get it really smooth!

5. Add salt to taste along with optional cayenne pepper and ground coriander. Process again until combined.

6. Scoop into a serving bowl. Garnish with smoked paprika, freshly ground black pepper, a generous drizzle of olive oil, and reserved edamame. Serve with crostini, toasted pita chips, crudités, and/or crackers.
